Wow, I’ve never heard of butternut squash lasagna. Looks absolutely delicious. That is definitely on my list of food to have before winter slips in!

P.S. I couldn’t agree more – it isn’t officially fall until I’ve had something pumpkin.

In New Zealand I think our pumpkin culture is a bit different than in USA, but last year I harvested 20 pumpkins from plants that self- seeded in our compost bin, so spent the whole winter cooking pumpkin dishes – pumkin soups , curries, pastas, risottos, lasagnes, Moroccan tangines, roasted as a side dish… Even as it comes into summer am loving roast pumkin in a baby spinach salad with feta and cous cous. There are no limits to the possibilies!!!

I can’t take my eyes of that blue floral dish – does anyone know where it can be found??
