5 Amazing Savory Pumpkin and Butternut Squash Recipes

I don’t believe it’s actually fall until I’ve had pumpkin or butternut squash soup. But after looking through this list, I think I may need to expand my repertoire. Pumpkin risotto? Yes, please! I have pretty low key plans for Halloween this year – something from the pumpkin family for dinner and a scary movie. I like to keep it simple, but I’m always looking for new ideas.     Wow, I’ve never heard of butternut squash lasagna. Looks absolutely delicious. That is definitely on my list of food to have before winter slips in!

    P.S. I couldn’t agree more – it isn’t officially fall until I’ve had something pumpkin.

    In New Zealand I think our pumpkin culture is a bit different than in USA, but last year I harvested 20 pumpkins from plants that self- seeded in our compost bin, so spent the whole winter cooking pumpkin dishes – pumkin soups , curries, pastas, risottos, lasagnes, Moroccan tangines, roasted as a side dish… Even as it comes into summer am loving roast pumkin in a baby spinach salad with feta and cous cous. There are no limits to the possibilies!!!
