Lamington’s are traditionally made with a Victoria sponge recipe cut into cubes, dipped in chocolate icing then covered all over with desiccated coconut. In Australia we have another tradition involving Lamington’s called a Laminton Drive which is a annual event to raise money for schools. Normally Anzac Day 25th April we make a biscuit called an Anzac in remembrance for our fallen soldiers (recipe on my Pinterest)
