I'm glad to see a Bonne Maman jar, because I have about 50 and keep everything in them and use them as cups.
Bonne Maman is the way to go.

I really enjoyed the video too. One question I had, does everyone (but me) know that when they say put parchment paper that you're supposed to spray with non-stick too? I would just have put the parchment down and then been pissed when the marshmallows stuck. Is this just a norm that I wasn't aware of? Thanks again.

here are all the directions from the video

How to Make Homemade Marshmallows:

Step 1: Line a square (8x8 by the looks of it) pan with parchment paper
Step 2: In a mixing bowl, mix 2 packs gelatin with 6 tbsp water
Step 3: In a pan on the stove, mix 1 1/3 cups sugar, 1/2 cup plus 2 tbsp light corn syrup and 1/4 cup water
Step 4: Cook over high heat until it reaches 240 degrees F
Step 5: Poor hot sugar into gelatin mix, then add 1/4 tsp salt
Step 6: Mix 5-10 minutes until very thick
Step 7: Add 1 tsp peppermint extract, 1 1/2 tsp vanilla extract
Step 8: Pour into pan, and smooth out
Step 9: Cover with parchment paper and let sit out overnight
Step 10: Cut into squares with scissors
Step 11: Coat with equal parts cornstarch and powdered sugar
